Ukha

Do you like eating fish? There are as many recipes for traditional Russian fish soup, known as ukha, as there are cooks in Russia. Traditionally, it is made with fish heads and bones, as well as different types of fillets. Put water in a large saucepan and bring to a boil over high heat. Add 3-4 peeled potatoes, a chopped onion, and some parsley. Heat for 10 to 15 minutes and add the fish. Heat for 10 more minutes, then squeeze in lemon juice and season with salt and pepper to taste. This soup is hearty enough to be eaten as a main course.
