D The great Russian fish is a freshwater fish, headed by the celebrated starlet from the River Volga. A menu can include several varieties of sturgeon and a dozen different salmon. Fish is served hot and cold, smoked, in aspic or stuffed, fried and marinated. Red caviar is the heart of every festive table.

A Russian cuisine is various and rich. There is a wide variety of appetisers, soups, main courses, and desserts. Soups play an important role in a typical Russian meal. Some of the most popular soups include shchi (a variety of cabbage and meat soups), borsch (beetroot soup), rassolnik (kidney and cucumber soup), solyanka (meat and fish stew) and okroshka (cold beetroot soup). Each soup has its own unique flavour and recipe, making them all worth trying.

B Roast suckling pig is a traditional festive dish on the Russian table. This dish is usually cooked by roasting it on a baking tray in an oven. This dish is poured with oil or butter and served with buckwheat and a hot sauce. Beef Stroganoff is a dish made from meat that has been cut into strips and then cooked in sour-cream sauce. The dish was named after Alexander Grigorievich Stroganoff who lived in the late 19th century in Odessa and had a French-trained chef.

C Pelmeni is a traditional Russian dish that has a long history. During the Mongol occupation, pelmeni were introduced in Siberia and the Urals, and they were gradually spread throughout Russia. Today, there are many different recipes and variations of this dish. The traditional filling for pelmeni is made from a mixture of beef, pork and elk meat. In some villages in Siberia, there is a special ceremony associated with making pelmeni. Families gather once or twice a month during the winter to make a large batch of the dish. Women make the dough, while men chop the meat. The finished pelmeni are shaped like ears, but can also be made in other shapes, such as squares or triangles. After they are prepared, the pelmeni are frozen and stored in cold places.
