Roll "California" is one of the most popular, but it's not Japanese. It was invented by Itiro Macita who worked at Tokyo Kaikan restaurant in Los Angeles in the 1970s. He noticed that the guests don't like traditional Japanese dishes because of raw fish and tough nori. He decided to hide nori under rice and use crab meat, pieces of cucumber and avocado for a filler. In several years the dish became popular in all America and even abroad.
